Kumara potato jackets
- 4 (1kg) kumara
- 2 eggs, beaten lightly
- 2/3 cup roughly chopped fresh chives
- 150 gram soft goat's cheese
Method
Kumara potato jackets
- 1Preheat oven to 200°C. Line a baking tray with foil.
- 2Scrub kumara and pierce all over with a fork. Wrap in plastic wrap; cook in a microwave oven on HIGH (100%) for about 8 minutes or until tender. Cool 5 minutes, then unwrap.
- 3Cut a 2cm-deep incision, lengthways from one end of the kumara to the other. Using a tea towel, gently squeeze the base of the kumara to open the top. Scoop two thirds of flesh into a small bowl. Repeat with remaining kumara.
- 4Add egg and half the chives to kumara flesh; stir to combine, season. Divide mixture between kumara and top with crumbled cheese. Place on baking tray.
- 5Bake stuffed kumara about 5 minutes or until golden brown. Sprinkle with remaining chives.
