Kumara and onion pizza

This simple, affordable and delicious meal is perfect for a midweek dinner. Whether it's the crispy pita bread, slices of kumara, or the vintage cheddar that tickles your taste buds, these homemade pizzas are a sure crowd pleaser.

  • 1 small kumara, unpeeled, thinly sliced
  • 1/2 small brown onion, cut into thin wedges
  • 1 large wholemeal pita bread
  • 2 tbsp salt-reduced tomato pasta sauce
  • 1 1/2 tsp finely chopped fresh rosemary
  • 1/4 cup coarsely grated low-fat vintage cheddar
  • 20 g baby rocket leaves

    Preheat oven to 220°C. Line an oven tray with baking paper.

    Cook kumara and onion on a heated oiled grill plate (or grill or barbecue) until browned both sides and tender.

    Place bread on oven tray; spread with sauce. Layer with vegetables and sprinkle with rosemary, then cheese. Bake for 8 minutes or until the base is crisp and the cheese has melted. Serve topped with rocket.
