Kumara and onion pizza
This simple, affordable and delicious meal is perfect for a midweek dinner. Whether it's the crispy pita bread, slices of kumara, or the vintage cheddar that tickles your taste buds, these homemade pizzas are a sure crowd pleaser.

Ingredients
- 1 small kumara, unpeeled, thinly sliced
- 1/2 small brown onion, cut into thin wedges
- 1 large wholemeal pita bread
- 2 tbsp salt-reduced tomato pasta sauce
- 1 1/2 tsp finely chopped fresh rosemary
- 1/4 cup coarsely grated low-fat vintage cheddar
- 20 g baby rocket leaves
Method
- 1Preheat oven to 220°C. Line an oven tray with baking paper.
- 2Cook kumara and onion on a heated oiled grill plate (or grill or barbecue) until browned both sides and tender.
- 3Place bread on oven tray; spread with sauce. Layer with vegetables and sprinkle with rosemary, then cheese. Bake for 8 minutes or until the base is crisp and the cheese has melted. Serve topped with rocket.
Notes
Pita bread makes an ideal thin and crispy pizza base when you're short on time and can't make your own.
