Honeydew granita

This is a delicious sorbet or granita and a great way to use any summer fruit - we used watermelon, mango, rockmelon, pineapple and lychees.

Ingredients

Method

1.In a blender or food processor, combine melon, sugar and juice. Process until smooth.
2.Pour mixture into a large, shallow baking dish. Freeze 1 1/2 hours until almost completely frozen. Scrape a fork along the surface to create small ice crystals.
3.Return to freezer 1 hour until completely frozen. Scrape again until all the mixture resembles ice crystals. Serve in small glasses with fresh fruit.
