Method

1.Soak the chillies in hot water for around 1 hour.
2.Drain and purée or grind to a paste with the oil. Add garlic, salt and spices. Mix then cover with a little oil before storing in the fridge.
3.Use it to season couscous or as a spice rub for meats on the barbecue.
