Homemade harissa paste

This simple recipe for homemade harissa combines chilli and spices to create a beautiful, flavourful paste that's perfect as a spice rub for meats or adding an extra kick to couscous

Ingredients

  • 10-12 dried chillies
  • 2 tablespoon olive oil, plus extra for storing
  • 3 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon ground caraway seeds
  • 1/2 teaspoon ground cumin

Method

    Soak the chillies in hot water for around 1 hour.

    Drain and purée or grind to a paste with the oil. Add garlic, salt and spices. Mix then cover with a little oil before storing in the fridge.

    Use it to season couscous or as a spice rub for meats on the barbecue.
