Homemade harissa paste
This simple recipe for homemade harissa combines chilli and spices to create a beautiful, flavourful paste that's perfect as a spice rub for meats or adding an extra kick to couscous

Ingredients
- 10-12 dried chillies
- 2 tablespoon olive oil, plus extra for storing
- 3 clove garlic, crushed
- 1/2 teaspoon salt
- 1 teaspoon ground coriander
- 1 teaspoon ground caraway seeds
- 1/2 teaspoon ground cumin
Method
- 1Soak the chillies in hot water for around 1 hour.
- 2Drain and purée or grind to a paste with the oil. Add garlic, salt and spices. Mix then cover with a little oil before storing in the fridge.
- 3Use it to season couscous or as a spice rub for meats on the barbecue.
