Hawker noodles with shaved sprouts

Method

1.Cook noodles according to package directions; drain and rinse with hot water. Set aside.
2.Heat the oil in a wok, add the pork and stir-fry until starting to brown. Add the ginger and garlic and mix, then toss in the shredded sprouts. Stir-fry until softened, about 3 minutes.
3.Meanwhile, make the stir-through sauce (see below).
4.Add the noodles and sauce to the wok, and toss until heated through. Add the peanuts if using, and top with sliced spring onion.

5.Combine all the sauce ingredients in a small bowl and set aside.
