Ingredients
Haloumi and vegetable skewers
- 1 block haloumi
- 1 red pepper
- 2 yellow pepper
- 2 small zucchini
- 1 red onion
- 1/2 cup olive oil
- 2 tablespoon finely chopped preserved lemon rind (or fresh lemon peel, chopped)
- 1/4 cup freshly chopped herbs
- 1 small clove garlic, finely diced
- sea salt
- cracked pepper
Method
Haloumi and vegetable skewers
- 1Soak skewers in water for 10 minutes to prevent them burning, or use metal skewers.
- 2Cut haloumi and vegetables into even bite-size pieces and thread onto skewers.
- 3Combine the oil, lemon rind, herbs, garlic and seasoning in a jar and brush half over the skewers.
- 4Cook skewers in a grill, frying pan or BBQ over a medium heat for 3-4 minutes each side, basting with the flavoured oil until vegetables are just tender and coloured.
- 5Serve drizzled with any remaining oil.
