Ingredients

Haloumi and vegetable skewers
  • 1 block haloumi
  • 1 red pepper
  • 2 yellow pepper
  • 2 small zucchini
  • 1 red onion
  • 1/2 cup olive oil
  • 2 tablespoon finely chopped preserved lemon rind (or fresh lemon peel, chopped)
  • 1/4 cup freshly chopped herbs
  • 1 small clove garlic, finely diced
  • sea salt
  • cracked pepper

Method

Haloumi and vegetable skewers
  • 1
    Soak skewers in water for 10 minutes to prevent them burning, or use metal skewers.

    Cut haloumi and vegetables into even bite-size pieces and thread onto skewers.

    Combine the oil, lemon rind, herbs, garlic and seasoning in a jar and brush half over the skewers.

    Cook skewers in a grill, frying pan or BBQ over a medium heat for 3-4 minutes each side, basting with the flavoured oil until vegetables are just tender and coloured.

    Serve drizzled with any remaining oil.
