Grilled teriyaki salmon with avocado salad

Ingredients

  • 4 x 150g salmon fillets
  • 1/2 cup teriyaki sauce
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/2 bunch dill
  • 1/2 bunch mint
  • 1/2 bunch parsley
  • 4 x nori seaweed slices (available from the snack or international aisle at your supermarket)
  • salad, mayonnaise, lime wedges to serve

Method

    In a shallow dish, combine salmon fillets and teriyaki sauce. Marinate for 30 minutes.

    Heat a large, nonstick frying pan on high. Cook salmon for 3 to 4 minutes each side. Rest for 5 minutes.

    In a bowl, combine cucumber, avocado and chopped herbs.

    Place a piece of nori on four dinner plates. Top with salmon, then serve with salad, mayonnaise and lime wedges.
