Greek-style macaroni cheese

Ingredients

Greek-style macaroni cheese
  • 30 gram low-fat spread
  • 2 tablespoon plain flour
  • 3 cup low-fat milk
  • 100 gram baby spinach
  • 10 cherry tomatoes, halved
  • 1/3 cup sliced pitted black olives
  • 4 green onions, sliced
  • 1 tablespoon chopped parsley
  • 350 gram macaroni, cooked, drained
  • 3/4 cup grated low-fat tasty cheese
  • 2 tablespoon grated parmesan
  • 60 gram low-fat feta, crumbled
  • 1 tablespoon oregano leaves
  • salad and crusty bread, to serve

Method

Greek-style macaroni cheese

    Cook pasta in salted boiling water according to packet instructions.

    Meanwhile, melt spread in a large saucepan on medium. Add flour and cook, stirring, for 1 minute. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.

    Add spinach, tomatoes, olives, onions and parsley to sauce. Heat, stirring, for 3-5 minutes. Mix cooked pasta, tasty cheese and parmesan through. Preheat grill to high.

    Spoon equal amounts into 4 ovenproof gratin dishes. Sprinkle with an even amount of feta and oregano. Grill for 1-2 minutes, until cheese is golden. Serve with salad and crusty bread.
