Greek-style macaroni cheese
- 30 gram low-fat spread
- 2 tablespoon plain flour
- 3 cup low-fat milk
- 100 gram baby spinach
- 10 cherry tomatoes, halved
- 1/3 cup sliced pitted black olives
- 4 green onions, sliced
- 1 tablespoon chopped parsley
- 350 gram macaroni, cooked, drained
- 3/4 cup grated low-fat tasty cheese
- 2 tablespoon grated parmesan
- 60 gram low-fat feta, crumbled
- 1 tablespoon oregano leaves
- salad and crusty bread, to serve
Method
Greek-style macaroni cheese
- 1Cook pasta in salted boiling water according to packet instructions.
- 2Meanwhile, melt spread in a large saucepan on medium. Add flour and cook, stirring, for 1 minute. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
- 3Add spinach, tomatoes, olives, onions and parsley to sauce. Heat, stirring, for 3-5 minutes. Mix cooked pasta, tasty cheese and parmesan through. Preheat grill to high.
- 4Spoon equal amounts into 4 ovenproof gratin dishes. Sprinkle with an even amount of feta and oregano. Grill for 1-2 minutes, until cheese is golden. Serve with salad and crusty bread.
