Gooey, chewy lemon and honey slice
This Nici Wickes lemon slice recipe is so deliciously chewy and using honey and fresh grated ginger in the topping gives it an amazing flavour. Perfect for winter days!

Ingredients
Gooey, chewy lemon and honey slice
- 1 1/2 cup Countdown free from gluten plain flour
- 2/3 cup Countdown caster sugar
- 170 gram Countdown butter (or use coconut oil for dairy-free)
- 1 tablespoon lemon zest
Topping
- 4 eggs
- 1/2 cup Countdown caster sugar
- 5 heaped tbsp Countdown honey
- 1/4 cup lemon juice
- 3 tablespoon lemon zest
- 1 teaspoon fresh ginger, grated
- 1/4 cup Countdown free from gluten plain flour
- icing sugar, to dust (optional)
Method
- 1Preheat oven to 180°C. Line a Swiss roll tin with baking paper.
- 2Process the flour, caster sugar, butter and lemon zest until it resembles breadcrumbs. Tip into the tin and gently press down to make an even base.
- 3Bake for 15 to 20 minutes until golden.
- 4While the base cooks, make the topping. Beat the eggs with the sugar until light and frothy. Add the honey and beat until incorporated.
- 5Stir in the lemon juice, zest, ginger and flour, then mix until combined.
- 6Pour over the hot base (I do this while it is still on the oven rack to save spillage). Bake for 35-40 minutes until set.
- 7Cool and cut into squares.
Notes
For clean edges, run the knife blade through hot water before cutting.
