Fudge brownie chocolate chunk cookies

These chewy fudgy cookies are a cross between a brownie and a biscuit. They are most delicious while still warm, or serve them cold and sandwiched with ice cream for dessert.

Method

1.Preheat the oven to 180°C. Line two baking trays with cooking paper.
2.In a large bowl, combine the flour, sugar, cocoa, pecans and chocolate.
3.In a separate bowl, beat the eggs, then add the butter and vanilla. Add this to the flour mixture, stirring with a wooden spoon until a thick cookie dough forms.
4.Take dessertspoon-sized chunks of dough and roll into rough balls. Place about 6 balls on each tray, allowing room for spreading.
5.Cook for 12-15 minutes until golden and semi-flat. Let cool for 5 minutes before transferring to a wire rack. Repeat with any leftover mixture.
6.When completely cold, sandwich with ice cream slices, if desired.
