Fudge brownie chocolate chunk cookies

These chewy fudgy cookies are a cross between a brownie and a biscuit. They are most delicious while still warm, or serve them cold and sandwiched with ice cream for dessert.

Fudge brownie chocolate chunk cookies
  • 1 1/2 cup self-raising flour
  • 1 1/2 cup sugar
  • 1/2 cup cocoa
  • 1/2 cup chopped pecans
  • 1/2 cup dark chocolate chunks
  • 1/2 cup white chocolate chunks
  • 3 eggs
  • 100 gram butter, melted
  • 1 teaspoon vanilla essence

    Preheat the oven to 180°C. Line two baking trays with cooking paper.

    In a large bowl, combine the flour, sugar, cocoa, pecans and chocolate.

    In a separate bowl, beat the eggs, then add the butter and vanilla. Add this to the flour mixture, stirring with a wooden spoon until a thick cookie dough forms.

    Take dessertspoon-sized chunks of dough and roll into rough balls. Place about 6 balls on each tray, allowing room for spreading.

    Cook for 12-15 minutes until golden and semi-flat. Let cool for 5 minutes before transferring to a wire rack. Repeat with any leftover mixture.

    When completely cold, sandwich with ice cream slices, if desired.
