Feta and watermelon triangles with mint, chilli and olive

Host the perfect cocktail party with this fantastic recipe for feta and watermelon triangles. Serve these bite-sized summery treats as canapés with a fresh twist!

  • 2 tablespoon mint, finely chopped
  • 1 tablespoon flat-leaf parsley, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 200 gram low-fat feta, thinly sliced into 48 triangles
  • 600 gram watermelon, rind removed, cut into 48 x 1cm thick triangles
  • 24 toothpicks
  • 24 whole pitted black olives

    Put mint, parsley and chilli in a small bowl, and stir to combine. Toss each piece of feta in the herb mixture to coat.

    Thread alternate layers of feta and watermelon on to toothpicks, finishing each with an olive. Chill until ready to serve.


  • If preferred, make the seasoning mix into a marinade by adding 2 tablespoons olive oil.
