Easter bun and apple bake

This is pure comfort food. Layers of spiced bun and apple baked with a vanilla custard makes for a moreish treat.

Ingredients

Method

1.Preheat oven to 150°C. Generously grease an oven-proof dish with some of the butter, selecting a dish that the buns will fit into quite snugly.
2.Slice each bun vertically into thirds and lay out in the dish, overlapping each slice.
3.Between each piece, place a slice of apple and sprinkle on a few more slices over the top.
4.Heat the milk and cream together to trembling stage – nearly boiling.
5.While it heats, whisk the eggs and sugar together in a bowl until light and creamy. Add the vanilla and mixed spice. Add the hot milk/cream to the egg mix and whisk until combined. Pour over the buns and leave for 15 minutes to allow them to absorb the custard mixture.
6.Dot the top with the remaining butter, then bake for 30-40 minutes or until puffed up and golden on top.
7.Serve warm in bowls with whipped cream or ice cream (or both!).

This is a great recipe to use up stale hot cross buns.
