Method

1.Preheat oven to 180%deg;C or 160%deg;C fan-forced. Line two 12-hole patty pan trays with paper patty cases.
2.Place flour, sugar, butter, egg and milk in a large bowl. Using an electric mixer, beat on medium speed 3 minutes, until mixture is smooth and pale. Stir through currants.
3.Spoon heaped tablespoons of mixture into prepared pans. Bake 15 minutes, until golden and firm to touch. Cool in pans. Dust with icing sugar before serving.
