Ingredients

Method

1.Preheat oven to 180ºC.
2.Heat butter in a large saucepan and sauté the onion, celery, carrot, garlic and ginger for 4-5 minutes, or until soft and fragrant.
3.Meanwhile heat the stock, saffron and milk until it’s near boiling.
4.Add wine to the sautéed vegetables and mix well, until evaporated.
5.Sprinkle over flour and cook on a medium heat, stirring well for 2-3 minutes until the texture is sandy.
6.Gradually add the hot fish stock and hot milk. Simmer for 5 minutes, then add seafood. Cook gently for 5-8 minutes, or until the seafood is cooked.
7.Divide mornay between 6 small serving dishes and sprinkle over panko and grated cheese. Bake until hot and golden.
