Method

1.Preheat oven to moderate, 180°C. Grease a 12-cup baking dish.
2.In a large saucepan of boiling salted water, cook pasta following packet instructions, adding broccoli in the final 2 minutes. Drain.
3.In a large bowl, whisk eggs and cream together. Add pasta, broccoli, tuna, spinach, onion and garlic, tossing to combine. Season to taste.
4.Transfer mixture into prepared dish. Sprinkle with parmesan. Bake for 30-35 minutes until bubbling and golden. Serve with rocket.
  • Dress rocket with a drizzle of olive oil and lemon juice, then season. – For a richer result, use grated tasty cheese in place of parmesan. – For a variation, use salmon instead of tuna
