Ingredients

Method

1.Preheat oven to 180°C. Line a 26cm x 18cm slice pan with baking paper.
2.In a bowl, combine coconut flakes, almonds, shredded coconut and ginger. Stir in honey and vanilla until combined.
3.Transfer to prepared pan, pressing down with the back of a teaspoon to flatten slightly.
4.Bake for 15 minutes or until golden, then set aside at room temperature for 1 hour or until firm. Cut into 8 bars to serve.

Add ground cinnamon instead of ginger, if you prefer.
