Chicken tikka masala with basmati rice
Spice up any night of the week with this deliciously easy chicken tikka masala with basmati rice. Serve with chopped coriander for added freshness!

Ingredients
- 2-3 teaspoons canola oil
- 1 skinless chicken breast, thinly sliced
- 1 tablespoon tikka masala spice paste
- 1 medium tomato, diced
- 1/4 cup tomato puree
- 1 tablespoon lemon juice
- 1/3 cup thick natural yoghurt
- 1 UNCLE BEN’S Basmati Rice Cup
- 2 tablespoon fresh coriander leaves
Method
- 1Heat oil in a pan then add chicken and stir-fry for 2 minutes. Add tikka masala paste and stir-fry for another minute.
- 2Add diced tomato and purée, then simmer for 3-4 minutes to cook chicken and reduce sauce.
- 3Stir in lemon juice and yoghurt. Simmer gently for another minute, while heating the rice cup for 40 seconds in a microwave, according to packet instructions.
- 4Place rice in a bowl and use a fork to fluff it up. Spoon chicken into the bowl and serve scattered with coriander.
