Method

1.Cook noodles in a medium saucepan of boiling water for 2 minutes. Add carrot, snow peas and onion; cook for 1 minute more. Drain noodles and vegetables. Return to pan.
2.Combine flavour sachet, oil, sweet soy sauce and chilli sauce from noodle packet in a small bowl.
3.Add sauce mixture and half the chicken to noodles; reserve remaining chicken for second meal. Toss to combine. Sprinkle with shallots. Serve at once.

The packet of instant noodles we used in this recipe contained 2 sachets; one was a dry flavour sachet and the other comprised oil, sweet soy sauce and chilli sauce. If you use noodles without the second sachet, add 1/2 teaspoon each of oil, soy sauce and chilli sauce to salad.
