Cheesy macaroni with mushroom and ham
  • 400 gram macaroni
  • 2 teaspoon vegetable or olive oil
  • 2 green onions, thinly sliced
  • 1 clove garlic, crushed
  • 200 gram button mushrooms, thinly sliced
  • 250 gram light cooking cream
  • 1/2 cup thickened cream
  • 250 gram sliced leg ham, chopped
  • 1 1/2 cup grated tasty cheese
  • 1/2 cup freshly grated parmesan

    Preheat oven to 200°C/180°C fan forced. Grease 4 x 3-cup shallow ovenproof dishes. Place on a baking tray. Cook pasta in a saucepan of boiling salted water for 6 minutes or until tender. Drain. Transfer to a large bowl.

    Meanwhile; heat oil in a frying pan over moderate heat. Add onion and garlic; cook and stir for 2 minutes or until soft. Add mushroom; cook and stir for 5 minutes or until softened.

    Add to pasta in bowl. Stir in creams, ham, 1/2 cup of the tasty cheese and parmesan until combined.

    Divide pasta mixture among prepared dishes. Top with remaining tasty cheese. Bake for 20 minutes or until golden and heated. Stand for 5 minutes. Serve.


No individual ovenproof dishes? Use a 3-litre (12-cup) baking dish instead. Cooking time will vary. Cook pasta up to a day ahead. Add a little vegetable or olive oil to drained pasta; toss lightly. Store in an airtight container in the fridge.
