Cheat's coq au vin

Escape to the villas of rural France with all the delicious flavours of coq au vin but only 20 minutes of the cooking time.

Cheat's coq au vin
  • 2 tablespoon olive oil
  • 1 medium (170g) brown onion, cut into 2cm-thick wedges
  • 100 gram diced bacon (see notes)
  • 300 gram small button mushrooms
  • 2 tablespoon plain flour
  • 1 cup (250ml) dry red wine
  • 2 cup (500ml) water
  • 1 large barbecue chicken, cut into a portions
  • 1/4 cup coarsely chopped flat-leaf parsley


Cheat's coq au vin

    Heat oil in a large wide-based saucepan over medium heat. Cook the onion until softened. Add the bacon and mushrooms; cook, stirring, until mushrooms are tender.

    Add flour to pan and stir until well combined. Add the wine cook, stirring continuously, until thickened and bubbling. Add the water and simmer until thickened slightly.

    Add the chicken pieces to the pan and cook until just heated through.

    Serve sprinkled with parsley.


Diced bacon is available from the deli section of supermarkets.
