Cashew nut brownie cookies

Nici Wickes' moreish cashew nut brownie cookies are ready in less than 30 minutes and are fantastic tin-fillers (and make a great lunchbox treat for the kids)

Ingredients

Method

1.Preheat oven to 180°C.
2.Cream the butter and sugar, then beat in the egg.
3.Sift in the dry ingredients and stir in the cashew nuts.
4.Roll tablespoons of dough into balls and place on a baking paper-lined tray. Press slightly to flatten.
5.Bake for 20 minutes.

Add the zest of 1 orange for a wonderful orange-choc flavour. Peanuts, chopped macadamia or almond nuts can be used instead of cashews.
