Cajun beef skewers with chipotle mayonnaise
Skewers or kebabs are an easy way to stretch meat or seafood. Marinate the meat for best results and always soak your skewers to avoid a fire hazard

Ingredients
Cajun beef skewers with chipotle mayonnaise
- 375 gram good-quality lean beef fillet, sirloin or scotch
- 2 clove garlic, finely chopped
- 1 teaspoon finely chopped ginger
- 2.5 tablespoon sherry
- 1 teaspoon cajun spice
- 1 teaspoon brown sugar
- bamboo skewers (soaked in water for 10 minutes)
- 1 red onion, diced
- 1 courgette, cut into bite-sized pieces
- 3 small peppers/sweeties, diced
- spray oil
Chipotle mayonnaise
- 3/4 cup thick mayonnaise
- 1 tablespoon chopped smoked chipotle (or roasted capsicum if you don’t want it too hot)
- 1/4 teaspoon smoked paprika
- pinch brown sugar
- dash worcestershire sauce
- salt and pepper
Method
Cajun beef skewers with chipotle mayonnaise
- 1Cut the beef into bite-sized pieces, then marinate in the garlic, ginger, sherry, spice and brown sugar for at least 30 minutes, longer if possible.
- 2Arrange the beef on the soaked skewers, alternating with the colourful vegetables.
- 3Spray the skewers with oil, then barbecue or grill for 3-4 minutes each side until coloured and cooked to your liking. Alternatively, put them on a lined oven tray and roast at 190oC for 8-10 minutes, turning once, until coloured and cooked.
- 4Serve with chipotle mayonnaise. To make this, whiz the mayonnaise with the chipotle or capsicum, paprika, sugar and Worcestershire sauce. Season to taste.
