Brie and salmon stuffed potatoes
  • 4 potatoes
  • 4 artichokes quartered
  • 200 gram sliced brie
  • 2 smoked salmon slices cut in half
  • cranberry sauce

Method

Brie and salmon

    Preheat oven to moderate, 180°C (160°C fan forced).
  • 2
    Cut a cross halfway through each potato. Place on a foil-lined oven tray.
  • 3
    Fill evenly with artichokes and brie.
  • 4
    Bake 5 minutes until cheese melts. Top each with 2 slices of smoked salmon and a dollop of cranberry sauce.
