Bolognese and cheese muffins
  • cooking oil spray
  • 2 cup self-raising flour
  • 1 teaspoon baking powder
  • 1 egg, at room temperature
  • 1 cup milk
  • 125 gram butter, melted and cooled
  • 1 cup fresh bolognese sauce
  • 1 cup grated tasty cheese

    Preheat oven 180°C/160°C fan forced. Lightly spray a 12-hole (1/3-cup) muffin tray with oil.

    Sift flour and baking powder into a bowl. Whisk egg, milk and butter in a jug. Gently fold into flour mixture until just combined. Add bolognese and half the cheese; fold until just combined (don't overmix). Divide mixture among prepared holes. Top with the remaining cheese.

    Bake for 25 minutes or until a skewer, inserted at centre, comes out clean. Cool for 5 minutes. Transfer to a wire rack. Serve warm or cold.


To warm: Microwave muffins on High (100%) in 30-second bursts.
