Beef sausage and beer muffins
  • 2 cup self-raising flour
  • 1 cup beer
  • 90 gram melted butter
  • 2 eggs, beaten
  • 2 sausages, cooked, sliced
  • 1/4 cup barbecue sauce
  • 1/2 cup tasty cheese, grated

    Preheat oven to 180°C. Lightly grease a muffin pan. Sift self-raising flour into a large bowl.

    Add beer, melted butter and eggs. Stir until just combined, in a small bowl, sausages with barbecue sauce. Fold sausage mixture and tasty cheese into batter.

    Spoon mixture evenly between muffin pan recesses until two-thirds full. Sprinkle each with remaining cheese.

    Bake muffins 20-25 minutes, until golden.Cool in pan 5 minutes before transferring to a wire rack.
