Ingredients

Banana pikelets
  • 3/4 cup soy milk
  • 1 large ripe banana, mashed, plus 1 extra, sliced
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla essence
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • cooking oil spray
  • strawberry jam, to serve

Method

Banana pikelets
  • 1
    Whisk milk, mashed banana, maple syrup and essence in a medium bowl. Sift flour and baking powder over mixture; mix with a fork until combined.

    Lightly spray a large non-stick frying pan with oil, then place over moderate heat. Cook heaped tablespoons of batter, in batches, for 2-3 minutes each side or until golden and cooked. Serve with extra banana and jam.
