Baked potatoes with bacon and cheese
A good cheesy baked potato is a classic that everyone loves. Simply serve with a throw-together green salad prepared while they are in the oven. Delicious! Photograph by Stephen Goodenough.

Ingredients
- 6 large_piece agria potatoes, scrubbed
- 100 gram streaky bacon, chopped (i used manuka-smoked bacon)
- 1 leek, trimmed and sliced
- 2 clove garlic, sliced
- 1 tablespoon grainy mustard
- 3 cup grated cheese (i used vintage tasty)
- 100 gram butter
- 1 egg
- green salad, to serve
Method
- 1Preheat the oven to 180°C. Bake potatoes for 40-60 minutes or until cooked. Leave the oven on.
- 2Slice potatoes in half lengthways. Scoop out flesh and place potato shells on a baking paper-lined tray. Place flesh in a bowl.
- 3Sauté bacon, leek and garlic until soft and golden and add to potato flesh.
- 4Add mustard, 2 cups of the cheese, butter and egg to the bowl and mash.
- 5Fill potato skins with the mash and top with remaining cheese. Bake in the oven for 15 minutes or until bubbling and golden.
- 6Serve immediately with a salad.
