Apple and plum bran loaf
Grated apples and chopped plums make this bran loaf extremely moreish. It is perfect as a sweet bite for morning tea, so put a batch in the oven in the morning and enjoy freshly baked with a cup of tea.

Ingredients
- 1 cup wheat bran
- 1 cup brown sugar
- 1/2 cup apple, grated
- 3/4 cup milk
- 1 tbsp honey or golden syrup
- 1 apple, finely diced
- 2 ripe plums, finely diced
- 1 cup plain flour
- 1 tsp baking powder
- 1 tsp vanilla
Method
- 1Soak the first five ingredients for 1 hour or longer.
- 2Preheat oven to 180°C. Line a standard loaf tin with baking paper.
- 3Add the diced apple, plums, flour, baking powder and vanilla, stirring to combine.
- 4Scrape into your prepared loaf tin and bake for 1 hour or until a skewer comes out dry. Leave to cool for 10 minutes before turning out to cool completely before slicing.
Notes
If you're not eating this within 1-2 days, store it in the fridge as fresh fruit can attract mildew. Blueberries work with the apples in this recipe too. Double the recipe and freeze one loaf for later if you wish.
