Apple Pimm’s
  • 2 cup cucumber juice
  • 1 1/3 cup pimm’s no 1
  • 1.5 litre (6 cups) chilled sparkling apple juice
  • 1 cup ginger wine
  • 1 thinly sliced lebanese cucumber
  • 1 thinly sliced red apple
  • 1 cup loosely packed fresh mint leaves
  • ice, to serve

    Combine all ingredients in a large bowl. Serve over ice.


Juice about 800g peeled cucumbers in a juicer separator. Or, puree peeled cucumber in blender or processor. Strain into a jug and discard the solids. Pimm’s No 1 is a gin-based alcohol flavoured with herbs.
