Method
1.Preheat oven to 180°C (160°C fan-forced). Line two 12-hole (1-tablespoon/20ml) mini muffin pans with paper cases.
2.Sift flour and cinnamon into medium bowl; stir in sugar and oats. Stir in combined milk, apple juice, vegetable oil and egg.
3.Add apple; stir gently to combine. Divide mixture into paper cases.
4.Bake muffins about 15 minutes. Stand 5 minutes before turning, top-side up, onto wire rack to cool.
