American-style flapjacks with bacon and maple syrup
- 2 eggs
- 1 1/3 cup (330ml) milk
- 2 tablespoon caster (superfine) sugar
- 2 cup (300g) self-raising flour
- 1/2 teaspoon bicarbonate of soda (baking soda)
- 40 gram (1½ ounces) butter
- 4 rindless bacon slices (250g)
- 3/4 cup (180ml) pure maple syrup
Method
American-style flapjacks with bacon and maple syrup
- 1Whisk eggs, milk, sugar and sifted flour and soda in medium bowl until batter is smooth.
- 2Melt 1 teaspoon of the butter in medium frying pan. Pour ⅓ cup of batter into pan, spread into a round shape. Cook about 2 minutes or until bubbles appear on the surface; turn flapjack over, cook until browned underneath. Transfer to plate; cover to keep warm. Repeat with remaining butter and batter to make a total of 8 flapjacks.
- 3Cut bacon slices lengthways into 3 pieces. Cook bacon in heated large frying pan until crisp. Drain on absorbent paper.
- 4Serve flapjacks topped with bacon and maple syrup.
