Method
1.Preheat the oven to 180°C (160°C fan-forced). Line a large baking tray with grease-proof paper.
2.Place the oats, cinnamon. almonds, dried apple in a large mixing bowl and toss to combine.
3.Drizzle over the apple sauce and maple syrup. Stir well to coat.
4.Tumble the oat mixture onto the lined tray and bake for 30 minutes, stirring every 10 minutes.
5.Remove from the oven and transfer to a clean tray to cool. Stir through the dried goji berries and bran, serve with milk or yoghurt and fresh fruit.
Oats are low GI and high in fibre which means energy is steadily released into your system, keeping you full for longer. Vitamin B in oats also helps transform carbohydrates into usable energy. Omega 3 and 6 in almonds help you stay alert and goji berries are rich in antioxidants. It will store for 2 weeks in an airtight container.
