Method
1.Preheat grill on high. Brush eggplant with 1 tablespoon of oil. Grill 3 minutes each side, until golden. Turn and repeat. Set aside.
2.Preheat oven to 180°C (160°C fan-forced).
3.Heat remaining oil in a frying pan on medium. Saute onion and garlic 5 minutes, until soft. Increase heat to high; add mince. Cook 5 minutes, breaking up lumps with a spoon, until brown and dry. Add tomato and oregano. Season to taste. Simmer 15 minutes, stirring occasionally, until sauce thickens.
4.To make cheese sauce: melt butter in a saucepan on low heat. Add flour. Cook, stirring, 1 minute. Whisk in milk. Increase heat to medium. Cook, stirring, 3 minutes, until sauce thickens. Remove from heat. Whisk in egg yolk, parmesan and nutmeg. Season.
5.Lay 1/3 of eggplant in base of an 8-cup ovenproof dish. Top with half of mince mixture. Repeat layers. Top with eggplant. Spoon over cheese sauce. Bake 45 minutes, until golden. Serve.
