Layered veal and vegetable meatloaf

Prepare this delicious meatloaf for your family any day of the week. Veal mince is layered with char-grilled vegetables and sprinkled with crumbly feta to create the tastiest weeknight dinner.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Line base and sides of a 22cm springform pan with baking paper, extending paper 3cm above edge of pan. Coarsely grate zucchini. Using hands. squeeze any excess liquid from zucchini.
2.Place mince, spice mix, egg, breadcrumbs, parsley, onion and zucchini in a large bowl. Using hands, mix well.
3.Press half the mince mixture into prepared pan. Sprinkle with half the mozzarella. Top with a layer of capsicum. then eggplant. Sprinkle with remaining mozzarella. Top with the remaining mince mixture; smooth surface.
4.Top with feta. Bake 50 minutes or until golden and cooked. Stand 10 minutes. Slice, serve with salad.

Tip: You can use 2 teaspoons each of ground cumin and ground coriander instead of spice mix.
