Thick, creamy and wonderfully warming, this hearty chowder is packed full of bacon, potatoes and fresh vegetarians to create a tasty soup perfect for cool Winter evenings.
1.Place bacon, celery and onion in a large pan over medium heat. Saute 2-3 minutes, until onion is tender.
2.Add potato. Cook 1 minute. Stir in water. Bring to the boil. Reduce heat and simmer, covered, 10 minutes.
3.Combine flour with a little milk to form a smooth paste. Add to pan with remaining milk, stirring constantly, until sauce boils and thickens. Season to taste.
4.Stir in cod, corn and capsicum. Simmer 5 minutes. Serve topped with parsley.
When in season, add 1 bunch of asparagus, trimmed, blanched and sliced.
