Method

1.In a large bowl, soak raisins in hot tea with honey for 30 minutes, until softened.
2.Preheat oven to 180°C. Grease a 14cm x 21cm loaf pan.
3.Fold flour and mixed spice into raisin mixture. Add eggs. Pour into prepared pan. Bake for 1 hour 10 minutes, until a skewer inserted comes out clean.
4.Cool on a wire rack before cutting into slices.
5.Serve with jam.
