Method

1.Preheat oven to 180°C (160°C fan-forced). Grease and line base and sides of a 19 x 9cm (base measurement) loaf pan with baking paper, extending at long sides for handles.
2.Sift flour into a large bowl; stir in oats and sugar. Whisk buttermilk, 1 tablespoon water, egg, vanilla, oil and 1/4 cup reserved peach juice in a large jug; stir into flour mixture.
3.Roughly chop half the peaches. Add peaches and cranberries to oat mixture; stir until just combined. Spoon into prepared pan; smooth surface. Arrange remaining peach slices over top of loaf.
4.Bake for 45-50 minutes or until a skewer inserted at centre comes out clean. Place pan on a wire rack. Brush warm loaf with fruit spread. Allow to cool in pan for 10 minutes; transfer to wire rack to cool completely.

Oats and fruit increase fibre.
