Ingredients

Method

1.Preheat oven to moderate, 180°C. Lightly grease and line an oven tray with baking paper.
2.In a large bowl, using an electric mixer, beat eggs and sugar together until pale and creamy. Beat in vanilla and zest.
3.Sift flour, baking powder and ground ginger together onto a piece of baking paper. Fold into butter mixture with nuts and glace ginger.
4.Divide mixture in half. Roll into two logs, 5cm thick. Place on tray. Bake 20-25 minutes, until lightly golden. Leave on tray to cool completely (or overnight).
5.Cut logs into thin, diagonal slices. Arrange in single layer on tray. Bake 10 minutes on each side. Transfer to a wire rack to cool.
6.Dip one end of each biscuit into either dark or white chocolate and allow to set. Serve with coffee.
