Ingredients

Method

1.Preheat oven to 80°C. Lightly grease two 20cm square cake pans. Line base and sides with baking paper.
2.Prepare packet mixes. Pour into prepared pans. Bake 40-45 minutes, until cooked when tested. Cool in pans 5 minutes, then turn onto wire racks to cool completely.
3.Draw and cut out a music note template, using a 40cm square piece of cardboard. Lay cool cakes over the top and cut with a sharp knife to create shape across the two cakes.
4.Tint buttercream with blue food colouring. Join cake shapes together, using a little buttercream to adhere to board. Spread all over with remaining buttercream, smoothing surface with a palette knife.
5.Divide icing into thirds. Wearing disposable gloves, knead yellow colouring into one third, purple into another, and leave one third white. Roll out each piece separately, between 2 sheets baking paper, until 3mm thick.
6.Using different sized star-shaped cutters, cut 6 stars from each icing sheet. Arrange on cake, draping some over edges and overlapping some.
7.Roll leftover icing into 3 separate logs, 1.5 cm thick. Place side by side and cut in half. Arrange one half on either side of cake creating a stylised Staff.

For a boy’s cake, tint buttercream green and colour stars orange, blue and white.
