Lemon icing
Method
1.Lightly grease an oven tray.
2.Sift flour into bowl, rub in butter. Stir in sugar, sultanas and lemon rind, then egg and enough milk to mix to a soft pliable dough. Knead on lightly floured surface until smooth and divide mixture into 3. Roll each third into a roll about 40cm long. Plait the 3 rolls firmly together. Place on to prepared tray, press ends of plait together to form a round shape.
3.Bake in 180°C/355°F oven for about 20 minutes.
4.Brush with sugar glaze. To make sugar glaze combine sugar and water in bowl, stir until sugar is completely dissolved. Bake further 5 minutes. Lift onto wire rack to cool.
5.To make lemon icing: sift icing sugar into bowl, stir in lemon juice, butter and enough water to mix to a pouring consistency.
6.Drizzle fruit twist with icing and sprinkle with peel and cherries.
