Method
1.Preheat oven to moderate 180°C. Lightly grease and line a deep 20 x 30cm slice pan.
2.Using an electric mixer, beat butter and sugar together until light and fluffy. Beat in vanilla.
3.Add eggs, one at a time, beating well after each addition. Fold sifted flour and cocoa through alternately with water.
4.Pour mixture into pan. Bake 35-40 minutes, until cooked when tested. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
5.To make ganache, place chocolate and cream in a small saucepan. Stir on low until chocolate melts and mixture is smooth. Transfer to a bowl and chill, covered, stirring occasionally, for about 30 minutes, until spreadable. Spread over cake.
