Method
1.Combine biscuits, cherries and ginger in a large bowl. Melt butter in a small saucepan on a low heat. Mix in brown sugar and cocoa, stirring until sugar dissolves. Beat in egg and vanilla.
2.Blend butter mixture into biscuit mixture until well combined. Sprinkle coconut onto a 30cm length of foil. Pile mixture onto coconut, forming into a log.
3.Roll up, pressing firmly. Seal and chill for about 3 hours or until firm. Slice to serve. Store in an airtight container in the fridge.
Other dried fruit may be used in place of glace cherries, if preferred.
