Method
1.In a small bowl, whisk together water, 1 tablespoon caster sugar and yeast until dissolved. Set aside, covered, for 10 minutes or until mixture is frothy.
2.Sift flour and salt into large bowl. Stir in remaining sugar, yeast mixture and eggs. Turn onto a lightly floured surface and knead for about 10 minutes until dough is smooth and elastic.
3.Divide butter into 10 equal portions. Knead each one into dough until incorporated. When smooth and glossy, knead in Craisins. Place dough into a large bowl. Chill, covered, for 3 hours.
4.Using fist, knock down dough to remove air. Divide dough into three equal portions and shape into 45cm long sausages. Place onto a large greased oven tray. Plait pieces together. Set aside, covered, until about doubled in size (about 40 minutes).
5.Meanwhile, preheat oven to moderate, 180°C. Brush plait with extra egg and sprinkle with sugar. Bake for 10 minutes. Reduce heat to moderately slow, 160°C, and bake for a further 20-25 minutes.
