Method
1.Combine milk and butter in a medium saucepan over moderately low heat. Stir until butter has melted and mixture comes to the boil. Add flour. Transfer mixture to a food processor bowl. Whisk eggs in a medium jug. With the processor motor running, slowly add eggs until mixture is thick and glossy. Spoon mixture into a piping bag fitted with a 1.5cm plain nozzle.
2.Place sugar and cinnamon in a large heatproof bowl.
3.Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Pipe circles of batter, 2-3 at a time, into hot oil. Deep-fry for 2 minutes or until golden. Turn; deep-fry tor 1-2 minutes more or until golden and cooked. Using a slotted spoon. transfer to bowl with sugar mixture. Turn, coating well in mixture. Transfer to a baking tray. Serve.
