Method
Apple cinnamon rolls
1.In a large bowl combine the 450g flour, caster sugar and 85g of the butter. Using your fingers, mix together to createa breadcrumb-type consistency. Add the eggs, yeast and milk, mixing until a soft dough is formed.
2.Knead the dough for 15 minutes by hand, or for 7 minutes in a mixer with a dough hook attached, until it is smooth, soft and springy. Tip into a lightly oiled bowl, cover with plastic wrap and set aside in a warm place to double in size for about an hour.
3.When ready to bake, grease and line the base of a 30cm x 24cm baking pan and preheat the oven to 180°C. Mix the remaining butter, brown sugar and nutmeg until combined. Set aside.
4.Roll risen dough out on a floured surface to make a rectangle, roughly 35cm x 25cm. Flour the entire dough surface. Spread the brown sugar and butter mixture over the dough, sprinkle lightly with the extra flour and ground cinnamon then position the apples over two-thirds of the dough leaving one side free. Spoon half the Caramel Cider Sauce onto the apples.
5.Tightly roll the dough, working towards the side with no apple mix. Cut into 12 even pieces and carefully place on the prepared baking pan. Set the rolls aside to rise for a further 20 minutes. Preheat the oven to 180°C.
6.Bake the rolls in the preheated oven for 16-20 minutes, or until the rolls are golden and cooked through. Remove and cool on a wire rack for 5-10 minutes, then serve immediately with the remaining Caramel Cider Sauce drizzled over top.

7.Place the apple cider in a pan over high heat and reduce until you have about ¼ cup remaining in the pan. Reduce the heat and add in the sugar, butter and cinnamon. Stir to combine and simmer for 10-15 minutes. As it simmers, add the star anise and infuse for 5 minutes then remove the star anise and discard.
8.Stir through the vanilla extract and salt and set aside to cool and thicken.
