Method

1.Using a vegetable peeler, peel zucchini into long thin ribbons. Cut each piece of fish in half lengthwise. Wrap 2-3 slices of zucchini around centre of each piece of fish. Season with salt and pepper.
2.Heat 2 teaspoons of the oil in a large frying pan over moderately high heat. Cook fish for 3-4 minutes each side or until cooked.
3.Process sun-dried tomato, pine nuts, basil and zest together until finely chopped. Add extra oil; process until combined. Add 1-2 tablespoons warm water; process until smooth. Season with salt and pepper.
4.Place beans and squash on serving plates. Top with fish. Drizzle with pesto. Serve at once.

Use bought sun-dried tomato pesto. We used base fillets, but you can use any firm white fish fillet. Try thinly sliced carrot instead of zucchini. Cook fish on the barbecue if you like.
