Try this sensational quick and easy yellow fish curry infused with Asian spices. This simple dish takes no more than 15 minutes, but is bursting with vivid and intense flavours.
1.Place fish, coconut milk and stock in medium saucepan. Cover; bring to a simmer over moderate heat. Simmer, covered, for 5 minutes.
2.Process onion, lemongrass, chilli, ginger, garlic, turmeric and 1/4 cup water to make a paste.
3.Stir paste through fish mixture, taking care not to break up fish. Add beans and kaffir leaves. Cover; simmer, for 3 minutes more or until beans and fish are tender. Season with salt.
4.Spoon rice into shallow bowls; top with fish. beans and sauce. Serve with lime wedges.
