Method
1.In a small saucepan, add oil, shallots, garlic, chilli, star anise and bay leaves; cook over low heat for about 5 minutes, or until oil begins to sizzle; cook further for about 2 minutes, or until fragrant. Remove from heat.
2.Shell and devein prawns, keep tails intact. Cut along back from head to tail without cutting all the way through. Flatten prawns to open.
3.Place prawns on an oven tray; season; then dot with butter.
4.Preheat oven grill. Cook prawns under grill for about 1 minute, or until curled and just cooked through.
5.Remove garlic from warm oil mixture. Add prawns to oil; toss to coat. Cover; stand until required.
6.Sprinkle prawns with coriander. Serve.
Not suitable to freeze. Not suitable to microwave.
