Method

1.Preheat oven to 180°C/160°C fan-forced. Grease and line a 26 x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Combine margarine, eggs and sugar in a large bowl. Sift combined flour, cocoa and baking powder over margarine mixture. Add half the walnuts, chocolate and prunes; mix well. Spoon into prepared pan; smooth surface. Sprinkle remaining walnuts over top of brownie.
3.Bake for 15-20 minutes or until a skewer inserted at centre comes out almost clean. Remove from oven. Cool completely in pan. Cut into 18 pieces. Serve.

Makes 18 We’ve made these brownies healthier by using poly- or mono-unsaturated margarine instead of butter, thus lowering saturated fat; used less chocolate and sugar; added walnuts for “better” fats and prunes for taste and fibre.
