Classic Indian finger food that no one can resist! Crisp and golden mixed vegetable bites cooked with a selection of spices in a chickpea flour batter which are deep fried.
1.Sift besan, salt, baking powder and spices into a large bowl. Make a well at centre. Gradually add 2/3 cup water, stirring until smooth. Add vegetables; turn to coat in batter.
2.Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-try small batches of vegetable mixture for 1-2 minutes or until golden brown. Using a slotted spoon, transfer to paper towels to drain. Reheat oil between batches if necessary.
3.Process buttermilk and mint until combined. Serve pakoras with mint sauce.
Serve pakoras with combined chopped mint and low-fat natural yogurt instead of sauce. If beans are tong, cut into thirds.
